A clock-time schedule you can follow

Pick same-day or overnight timing and get a full plan: starter feed, mix, bulk, shape, proof, and bake—each with estimated start times for your kitchen.

  • Back-calculated from when you want to bake
  • Cold retard and overnight options built in
3 Ingredients

Weighed ingredients, grouped by stage

Starter build, tangzhong, and main dough each get their own list with exact grams. Scale a 900 g loaf to two loaves and every weight follows.

Temperature-adjusted timing

Your kitchen environment drives fermentation speed. The planner estimates rise time from room temperature and starter percentage so your sourdough baking schedule matches real conditions—not a generic recipe card.

Learn how timing works

Everything you need in one bake

The scroll tour above shows the real UI. In practice, four quick steps take you from idea to oven—then My Loaf keeps the record.

  1. Pick style & timing

Artisan, sandwich, or tangzhong—same-day or overnight.

  2. Set ratios & weight

Hydration, temp, and loaf size drive live ingredient math.

  3. Get schedule & bake

Clock-time plan plus active tracking with reminders.

  4. Journal in My Loaf

Notes, ratings, and photos saved on your device.

Same-day vs overnight sourdough schedule

A same-day bake compresses fermentation: you feed the starter early, mix by midday, and bake in the evening. An overnight schedule uses a cold retard in the fridge so flavor develops while you sleep—shape in the evening, bake fresh in the morning.

In Guided, step 2 lets you choose timing that fits your week. The planner back-calculates each stage so you know when to feed, mix, and preheat. For sourdough fundamentals—starter strength, hydration, and fermentation cues—see our sourdough basics guide and starter build guide.

Get reliable bake reminders on your phone

Mobile browser tabs often mute or delay notifications. Adding the bake planner to your home screen keeps step reminders closer to a real app—especially useful during bulk fermentation and proofing.

iPhone & iPad (Safari)

  1. Tap Share in Safari’s toolbar
  2. Scroll and tap Add to Home Screen
  3. Open the planner from your home screen before your next bake

Installed from the home screen, reminders work more reliably than in a regular Safari tab.

Android (Chrome)

  1. Tap the browser menu
  2. Choose Install app or Add to Home screen
  3. Launch from your home screen for the best reminder experience

If you see an install banner at the bottom of this page, tap Install when prompted.

After installing, start a bake in Guided or Pro and enable reminders when a stage runs long.

Bake planner FAQ

Sourdough and Bread is a free bake planner for home bakers. You create a recipe with baker’s percentages, get a clock-time bake schedule, track each stage with optional reminders, and save notes and photos in a baking journal that stays in your browser.

No. Ingredient math is one part. You also build a full recipe, generate a same-day or overnight bake plan, run an active bake with stage tracking and optional notifications, and document each loaf with notes, ratings, and photos.

During an active bake you can enable browser notifications. When a stage runs past its estimated time, you get a reminder to check the dough—useful for bulk fermentation and proofing.

Yes. My Loaf stores in-progress and completed bakes with notes and photos on your device (localStorage). You can export and import your history. No account is required.

Yes—it’s free in the browser. Switch leavening between sourdough and commercial yeast; artisan, sandwich, and tangzhong styles work for both, with timing estimates adjusted for the leaven you choose.

A hydration calculator answers one question: how much water for a given flour weight. The sourdough bake planner builds a full recipe with baker’s percentages, estimates rise time from room temperature and inoculation, generates a clock-time baking schedule, tracks each stage during an active bake, and saves notes and photos to My Loaf.
