How to Use This Calculator
Choose your bread style (Super Soft Tangzhong, Classic Sandwich, or Artisan), then set leavening to sourdough or yeast. The sliders control total loaf weight, room temperature (for rise-time estimates), whole wheat percentage, hydration, and optional sweetener and fat. The recipe updates in real time.
For sourdough, pick a leaven style (liquid, stiff, or sweet stiff) and a feed ratio that matches how you maintain your starter. Use the Copy Recipe button to copy the full recipe, or Bake It! to save it to your baking history with notes and photos. Your data stays in your browser.

Essential Guide
1. Storage (Small & Cold)
Don't keep a huge jar. Store just 20-30g in the fridge. Feed it 1:3:5 (Starter:Water:Flour) to keep it stiff and slow-degrading.
2. Baking Prep
Never use cold starter. The night before, take 10g from fridge. Feed 1:5:5 (10g Starter + 50g Water + 50g Flour). Use at peak.
3. Revival (Old Starter)
If neglected: Take just 5g (scrape from bottom). Feed 1:5:5. Wait 24h+ until bubbly. Discard rest.
